Hello 2016.

This is an easy and pretty low carb salad for summer bbqs.

Serves 4, scale up for a crowd.

ingredients

  • 40g mixed lettuce
  • 10g basil, fresh, leaves only
  • 200g green pear
  • 50g macadamia nuts
  • 100g blackberries, fresh
  • 4 tablespoons (80ml) olive oil
  • 2 tablespoons (40ml) balsamic vinegar
  • 1 tablespoon (20ml) sugar free maple flavoured syrup

dressing:

Blend the olive oil, balsamic vinegar, sugar free maple flavoured syrup and half the blackberries until combined.

salad:

Chop the macadamia nuts and slice the pear thinly.

Place the mixed leaves on a plate, layer with the pear and the remaining blackberries.

Scatter with macadamia nuts and drizzle with the dressing.
